Tell us about your role?My role is to create welcoming and inspiring spaces for our customers to enjoy. Each of our venues are truly unique and interesting and the interiors play a huge role in that. From our beachside shipping containers to our award winning flagship restaurant at Rocksalt, each venue offers a sympathetic design to create a warm and welcoming atmosphere. It is my role to create these spaces and maintain their essence.

What’s the best part of the job?The best part of my job is the diversity and creative freedom. From sourcing tiles and bathroom fittings one day for our B&B rooms to finding interesting items for the pubs at Antique Fairs and markets, our diverse range of pubs, restaurants and rooms are designed with comfort in mind and design plays a vital role in that.

What’s your favourite venue & why?My favourite venue has to be Little Rock. Located right on the beachside in Folkestone serving fresh daily fish caught from the day boats operating out of Folkestone harbour and surrounding coastlines. Locally sourced Skate Wing with caper butter and a cold glass of Kentish white wine on the beach has to be my ultimate favourite—it’s utter heaven!

And second choice?When not at Little Rock, my next favourite food choice has to be Whitstable Bay Oysters and Champagne on Rocksalts terrace, no better place to be whilst enjoying the stunning views out across the harbour.

Hobbies & Fun Fact?Travelling—anywhere and everywhere, sea swimming, upholstery and I have plans to enrol on a Day Skippers qualification so I can go sailing with my friends and family. I dream of one day living in Paris with a handbag dog called Claude, I’ll let you know how I get on with that!
